Super-fast to make, delicious with a cup of tea, who wouldn't love these? I've had a soft spot for them ever since my mom brought home the recipe from her coworker when I was a teenager. They're nice rewarmed in the microwave for a few seconds if you manage to not eat them all when they are fresh out of the oven.
Chocolate-Chip Muffins
from my mom
2 C flour
2 t baking powder
2/3 C brown sugar
3/4 C milk
1 egg
1/4 C oil
1/2 t vanilla
1 C chocolate chips
Combine dry ingredients with chips. Set aside.
Mix liquid ingredients. Add all at once to dry. Stir until moistened.
Fill muffin cups 2/3 full. Bake at 375 for 15 - 20 minutes.
