Turkey Gyros

Cucumbers and tomatoes in the summer and cool yogurt sauce make these a light, refreshing meal.






 



Gyros:
1/2 small onion, chopped
2 T chopped parsley
2 pressed garlic cloves
1 lb. ground turkey
1/2 t dried thyme
1/2 t salt
1/2 t ground black pepper
2 t olive oil
4 flat pita rounds without pockets
sliced cucumber and tomatoes

Yogurt Sauce:
1/2 C plain yogurt
2 pressed garlic cloves
1/8 t salt
2 T chopped parsley
1/4 C cucumber, finely chopped

Preheat oven to 500. Combine all but last 3 gyro ingredients in a bowl. Form into 4 thin, rectangular loaves about 1/4 inch thick. Heat oil in a pan. Cook loaves 1 - 2 minutes on each side or until browned. Put on rimmed baking sheet. Bake 6 - 8 minutes till loaves are no longer pink in the center.

Combine ingredients for yogurt sauce in a bowl.

Warm pita breads in microwave.

Slice turkey loaves lengthwise; arrange over pita bread. Top at the table with yogurt sauce, sliced cucumbers, and tomatoes.
